Fusion Recipes

I love fusion when it makes sense, bringing together cuisines that may seem completely different but share ingredients, flavour combinations or techniques that allow them to create something even better together. My Sambal Crusted Rack of Lamb does exactly that, combining the elegance of classic French cookery with the bold, vibrant flavours of Sri Lanka, and that’s the kind of fusion you’ll find in this section.

Sambal Crusted Rack of Lamb

This is my signature dish for sure. I first cooked it on MasterChef and have brought it out at many private dining events and shows since. It’s a true representation of how I like to cook and the flavours of my culture. Decadent and delicious, what more do you want??

Fish cutlet Scotch egg

This not-so-little snack seemed like a no-brainer to me. When I was younger, my dad would head to the supermarkets and Tamil food shops on the same trip, coming back with both scotch eggs and shorteats like fish cutlets. I obviously had to therefore put the two together to make the perfect fish cutlet scotch egg with a gooey yolk right in the middle.

JAFFNA Lamb Burger

Everyone loves a loaded burger; difficult to get in your mouth, makes an absolute mess but leaves you feeling oh so satisfied. This is my version and it is packed with a juicy, aromatic lamb patty, topped with a meaty, spicy mutton curry and finished with raita and a tomato and red onion sambal. Hefty.
